strawberry forever

This is the other version of the birthday cake/pie/whatever-it-is that I made for Jurichan’s 21st birthday. I ended up having extra stuff so I used the rest and make it into another pie. The top part of the pie was supposed to be meringue but unfortunately I wasn’t skilled enough to make it….. The original recipe is from an incredibly amazing food blog called Spoon Fork Bacon. I’ve moderated it based on how I made it (in a weird way):

For the crust: Preheat oven to 350F. I used 1/2 stick of melted butter (should be enough for 2 pie crust), 3 tablespoons of granulated sugar and mix it with approx 200 g digestive biscuit crumbs (yes, I actually mashed them with my own hands. be ware of having sore hands afterwards). Bake for 15-20 minutes.

Squeeze half a lemon, mix the juice with 2 tablespoons powdered sugar with the finely diced strawberries.

3. If you want to have meringue on the top of the pie, you can follow the instructions on the original recipe here
Since I failed big time with the meringue, I served it with vanilla ice cream instead. For Juri’s birthday I used whipped cream. Everyone was scooping the pie until nothing was left……
